Chef Feker prepares pasta salad
Chef Feker joins Real Milwaukee to prepare a delicious pasta salad. CHEF FEKER’S PASTA SALADINGREDIENTS • 2Lb Penne Pasta cooked all the way (not al dente) For the Dressing • ½ Cup Extra Virgin Olive Oil • 1 Cup Mayonnaise • ¼ Cup White Balsamic • 1T Roasted Garlic • Salt and white pepper to taste DIRECTIONS 1. In a bowl mix the roasted garlic and mayonnaise. 2. In a slow and steady stream add the olive oil whisking constantly. 3. When a smooth consistency is reached add the balsamic in a slow and steady stream whiskingconstantly. Season with salt and white pepper to taste. You want to add the dressing to the pasta while the pasta is still warm. THE VEGETABLES • 1 red onion diced • 1 bunch of Broccoli blanched and cut in florets • 3 Carrots peeled and diced • 4 stalks celery diced • 1 yellow pepper • 1 red pepper • 2 cloves garlic chopped • 2T olive oil DIRECTIONS 1. In a large pan on medium heat sauté the onion, carrot, and celery until soft. Add the peppers and continue cooking. Add the garlic and reduce the heat. Add the Broccoli and toss everything together. 2. Toss the vegetables together with the warm pasta, dressing and 1 cup grated parmesan. Season withsalt and white pepper. Cool and serve. Garnish with chopped parsley and extra virgin olive oil if desired.
