IL MITO’s Marinated Grilled Turkey Chopped Salad

Serves 4
Ingredients for grilled turkey
• 2 turkey tenders, pounded and marinated in chopped rosemary, garlic and olive oil
• Drizzle of olive oil for grilling

Ingredients for grilled turkey
• 1/3 cup extra-virgin olive oil
• 1/3 of cup of good mayonnaise
• 1/3 cup of white vinegar
• 1 chipotle pepper
• 2 cloves of roasted garlic
• Salt and freshly ground pepper to taste

Ingredients for salad
• Italian imported all natural pepperoni chopped
• 1 large tomato chopped
• 1 large carrot peeled and diced
• 1 zucchini sliced and diced
• 1 pound of crimini mushrooms cleaned, stems removed and diced
• 2 heads of romaine hearts cut in half and washed, patted dry and chopped

1. Preheat your grill. Remove turkey from marinade. Place the turkey on the grill and cook for 2 minutes on each side. Remove from the grill, let rest for 2 minutes and cut into shreds.

2. Meanwhile, combine all the ingredients for your dressing in a blender and mix well.

3. Then, in a large bowl, toss all salad ingredients with the desired amount of dressing. Season with salt and pepper. Mound the lettuce in the center of the platter and top with the grilled turkey.
