Dinner in a Pumpkin      

Serves 4-6

1 large pumpkin, about 5-6 pounds

1-2 tablespoons olive oil

1 lb ground lamb, browned and fat drained off

1 small onion, finely diced

1 small red bell pepper, finely diced

1/2 green zucchini, finely diced

1-1/2 cups cooked wild rice

1/2 cup chicken broth

3 oz. shredded swiss cheese

1/2 teaspoon each salt, pepper, garlic powder and rubbed sage

1 teaspoon dried thyme

3/4 cup cream or half & half
