Milwaukee man becomes the only certified organic chocolate maker in the state

MILWAUKEE (WITI) -- It started as a mission to find the perfect cup of hot chocolate.

"I was always looking for a high quality hot chocolate, but never could find one. So that was one of my first inspirations to get into chocolate," said Dan Bieser.

So Bieser started making his own chocolate. He researched and learned the science of producing organic chocolate.

"It was tedious and frustrating to learn it from scratch," said Bieser.

After months of trial and error he began selling it, calling it Tabal Chocolate, tabal meaning relationship in Mayan. The chocolate only has four ingredients. The main one is nibs, which is found inside the cacao bean.

"We take the nibs we combine that with the whole vanilla bean that we chop up, organic cane sugar, and organic cocoa butter," said Bieser.

Organic chocolate contains more nutritional value and importing the cacao beans from various locations in Central and South America provide a variety of flavors.

"Wow, I can't believe that you can taste the difference in the beans is the reaction and that's the reaction that I was looking for," said Bieser.

This year, Bieser became the only certified organic chocolate maker in the state.

"There's only about 20 people in the whole United States that make craft chocolate the way we do. So it's a small group but it's definitely a growing industry," said Bieser.

Despite his success, Bieser says he's working on his hot chocolate game.

"My New Year's resolution is to make the best possible cup of hot chocolate and this is going to be the year," said Bieser.

Tabal Chocolate is sold in 40 stores in the Greater Milwaukee Area.
