Healthy chocolate pudding?! The secret ingredient and how your kids can help you make it



MILWAUKEE -- She's a woman on a mission to change the way your kids eat by offering healthy recipes kids actually like. Registered dietitian and author of the "Victory Bite," Erica Cleven, joins Real Milwaukee with a dinner and dessert your kids will love.

***Shhhhh-It`s-a-Secret Chocolate Pudding
It sounds crazy, but this is seriously the best chocolate pudding you`ll ever have. If you don`t tell anyone that the creaminess comes from avocados, they`ll never know. It`ll be our little, healthy secret.
Level 2
Makes 2 cups
Time 15 minutes

      Directions
      1. Use sharp knife to slice avocados in half and pry apart. Remove pit with spoon and scoop out flesh with tablespoon.
      2. In bowl of food processor, combine avocado, syrup, milk, cocoa powder and vanilla. Process until smooth and creamy, stopping to scrape sides with spatula as needed.
      3. Serve with whipped cream, if using.

      Mix It Up: Add 2 tablespoons of creamy peanut butter to food processor before blending.

      a. Measure syrup, milk, cocoa powder and vanilla
      b. Scrape sides of food processor bowl
      c. Spoon pudding into bowls

      ***Tangy Tuna Salad
      You can use this as a dip for cucumbers or celery to get in some extra veggies, or serve it on a whole wheat English muffin or crackers.

          1. Put tuna in medium mixing bowl. Use a fork to break apart large chunks.
          2. Add remaining ingredients; stir to combine. Serve cold.

          Mix It Up: Use 2 cans salmon or 1 1/2 cups cooked shredded chicken instead of tuna.

          a. Measure mayo, yogurt, lemon juice and salt
          b. Help chop celery
          c. Mix ingredients together

          ***Whipped Up Whipped Cream
          Turning milk and maple syrup into sweet and fluffy whipped cream is the tastiest science experiment ever! All you need is a bowl and an electric mixer.

              1. In large mixing bowl, beat cream and syrup with electric mixer on high speed 6 to 8 minutes or until stiff peaks form. 'Stiff peaks' are formed when you can lift beaters up and peaks stand straight up instead of flopping over. Also, you should be able to tilt the bowl without the mixture sliding around.
              2. Store in refrigerator up to 3 days.Mix It Up: Add 1 teaspoon of cinnamon or 1 tablespoon of unsweetened cocoa powder before beating.
