Discover some delicious dishes you can make with Quinoa

Do you like Quinoa? In this week's Dining with Duria, Angelica is showing you some delicious dishes you can make using Quinoa.

NOTE: Quinoa is typically a 1:2 ratio with water.  (For every cup of quinoa, use 2 cups of water.)  Bring to a boil, then simmer  on LOW for 20 minutes until all the water is absorbed.

Quinoa-stuffed Peppers

Ingredients:

-          2-3 green, red or yellow bell peppers with top cut off and cleaned

-          1 tbsp olive oil

-          ½ chopped onion

-          1 scallion stalk, chopped

-          4 cloves of garlic, minced

-          ½ cup chopped cilantro

-          1 cup of spinach

-          ½-1 cup sweet corn kernels

-          1 tsp ground cumin

-          1 cup cooked quinoa

-          Crumbled Feta cheese

-          Salt & pepper to taste’

-          Cooked Ground beef/chicken/turkey crumbles (optional)

Directions:


    Quinoa Greek Salad

    Ingredients:

    -          1 cup cooked quinoa

    -          1 cucumber, chopped

    -          ¼ - ½ red onion, chopped

    -          ½ plastic crate of grape tomatoes, sliced in half

    -          ¾ - 1 cup of spinach

    -          Pitted Kalamata olives (to desired amount

    -          Crumbled Feta cheese(to desired amount)

    -          Vinaigrette dressing of your choice (I use Brianna’s French Vinaigrette dressing)

    -          Chicken strips (optional)
