All week long we're talking about State Fair food. Elaine Mason, a top finalist in the Family Favorites Recipe Contest at the State Fair, joins FOX6 WakeUp to how off her delicious and quick Mediterranean pizza.
Mediterranean Quick Pizza
Pizza Crust:
1 1/2 cups Original Bisquick Mix
1/3 cup hot water
1 tablespoon olive oil
Topping:
2 (8 ounce) packages cream cheese, softened
1/2 can oil packaged sun-dried tomatoes
1 cup chopped tomato
1 cup chopped cucumbers
1/4 cup chopped red onions
1/4 cup kalamato olives
1/4 cup Greek vinaigrette dressing* (homemade or purchased)
1/2 cup crumbled feta cheese
1 cup spinach
For Pizza Crust: Preheat oven to 400 degrees F. In mixing bowl, combine Bisquick mix, hot water and olive oil until a dough forms. Press dough in a greased 12-inch pizza pan, pressing in pan till edges of pan covered. Using a fork, make indentions in crust to prevent crust from puffing. Bake for 15 to 17 minutes until crust is brown. Let cool.
For Topping: Combine cream cheese and sun-dried tomatoes. Spread cream cheese mixture onto pizza crust. Mix together tomatoes, cucumbers, red onions and olives. Spoon the tomato mixture over the cream cheese. Mix together the feta cheese and vinaigrette. Top the pizza with feta cheese and spinach.
Yields: 12 servings.
Homemade Vinaigrette Dressing:
1/2 cup red wine vinegar
3 minced garlic cloves
1 tablespoon basil
1 teaspoon oregano
3 tablespoons lemon juice
3/4 cup extra virgin olive oil
Whisk together all ingredients together in a small bowl.
