'Rib Whisperer' brings world's largest grill to Summerfest



MILWAUKEE (WITI) -- On Saturday, July 6th, the world's largest music festival hosted the world's largest smoker and grill, along with the man who created it.

"I am the 'Rib Whisperer' and there's a reason for that -- my ribs are second to none," said Trace Arnold. "If you're the biggest festival, we got the biggest Ultimate Smoker and Grill right here with ya."

Arnold created the Ultimate Smoker and Grill in 1997. It's an 80-foot mobile meal machine featuring two chambers that can smoke up to 2,000 pounds of brisket at one time. Underneath the 20-foot hydraulic lid is a wood grill measuring four feet across and 10 feet wide.

"It'll do 1,000 hot dogs, 500 hamburgers or 200 16-ounce rib-eyes at one time," said Arnold.

Being at Summerfest allows Arnold the chance to share the flavors of his hometown -- Justin, Texas -- with the people of southeastern Wisconsin. Arnold says he's happy to be visiting Milwaukee for another reason, as well.

"This is my first time here. We're excited to be here in Milwaukee this year at Summerfest. I've heard it is the 'Beer Capital of America,'" said Arnold.

The Rib Whisperer served up some words of wisdom for those barbecuing in their own back yards.

"Just don't get too much in a hurry. Smoking meats is a process and it takes time and temperature -- which you'll want to be low -- no lower than 180, probably 200 is a nice, sweet number," said Arnold.
