Do you like egg rolls? In this week's Dining with Duria, Angelica shows us how to make homemade egg rolls?

 

Baked Filipino Egg Rolls (Lumpia)

Makes about 60 rolls

Ingredients:

-          1 lb ground lean pork

-          1 medium carrot, chopped fine

-          1 medium onion, chopped fine

-          1 (8 oz) can water chestnuts, drained and chopped fine

-          1 (8 oz) can bamboo shoots, drained and chopped fine

-          8 cloves of garlic, minced

-          1 teaspoon grated fresh ginger

-          2 teaspoons soy sauce

-          1 teaspoon black pepper

-          1 package Spring Roll wrappers (can find at local Asian store or Woodmans)

-          1 large egg, beaten

-          Sweet & sour sauce of your choice

    Note: You can make the rolls ahead of time and keep raw lumpia in the fridge for up to 3 days, or frozen up to 4 weeks.  Then bake when desired.
