Get a good, healthy meal without the stress of cooking

Rosemary and Bacon Acorn Squash

1 squash

1/2 - 3/4 c chicken broth

1/4 c red onion, chopped

1/4 c mushrooms, chopped

1 tsp rosemary, chopped

6 oz. organic, turkey bacon

pinch (or more) cayenne pepper

1/4/c asiago cheese

salt, pepper, garlic powder to taste

Cut squash in half, lengthwise, and remove seeds. Place cut side down in a jellyroll pan filled with a half-inch of water. Bake at 350 degrees until fork tender. Cool and scoop squash into a mixing bowl.

Saute onion, mushrooms, rosemary, turkey bacon, a little chicken broth, salt and pepper until onions are tender. Pour into mixing bowl.

Combine remaining ingredients in bowl and transfer to 9 x 11 glass baking dish.

Bake, uncovered, for an additional 15 minutes.
